Making mayonnaise by hand versus whipping it with a mixer

You have two options when preparing homemade mayonnaise. You can either whip it nicely by hand, within ten to fifteen minutes, or you can use a mixer to do this. You will be more happy with the hand-whipped one, but your hands will still be sore the next day - it is also a very difficult task. The mixer will do the hard work for you and cut down on your prep time.

Mayonnaise that is too thick, too stiff or, on the contrary, too liquid

The basic mayonnaise recipe consists of egg yolks and oil, while the egg should be at room temperature. Even though the instructions seem quite clear, several scenarios can arise.

  • The first of them is mayonnaise that is too thick and stiff. What to do with it? You probably didn't follow the recipe exactly and added more oil than you should have. How to get out of it? Try adding a drop of tap water or lemon juice. Simply something that contains water.
  • Of course, the opposite problem occurs if you have added too little oil to the yolk - and instead of beautifully whipped mayonnaise, you have created a runny mixture. Just add a few drops of oil and the mayonnaise will become thicker.

Why am I not able to combine the egg yolk with the oil?

The most common problem when whipping homemade mayonnaise is when the egg yolk and oil do not cooperate and do not combine into a single emulsion. Therefore, it is necessary to proceed really slowly and patiently.

Add the oil drop by drop to the egg yolk and whip the whole time.

Olive or sunflower oil? Follow your preference 

Basically, there are two basic types of mayonnaise. The one prepared from olive oil and the one from sunflower oil. The choice of oil depends on your taste preferences. For some, the taste of olive oil is too strong, so they prefer classic sunflower mayonnaise.

Try both variants and find out which one you like better.

Play with the taste of mayonnaise

As soon as you get the hang of whipping homemade mayonnaise, i.e. at the moment when it will not be a problem for you to whip up a perfect emulsion from an egg and 1/2 cup of oil, start experimenting with taste.

You can really add anything to mayonnaise, for example:

  • mustard,
  • lemon juice,
  • pickle brine,
  • salt,
  • pepper,
  • vinegar,
  • herbs and more.

If your first attempt at making homemade mayonnaise doesn't go to your liking, don't worry, it takes a little practice, but the reward will be a delicious taste in the end.
