A true Czech potato salad basically consists of boiled potatoes, eggs, pickles, carrots, parsley, celery, onion and mayonnaise. Other ingredients that can be found in various recipes are ham, peas or mustard. It is typically served cold.

Potato salad goes best with schnitzel, and during the Christmas it is traditionally served with carp (or other fish) or sausage. If you want to make a lighter version of this hearty side dish, try replacing the mayonnaise with plain yogurt.
