Wash the eggplant and cut it in half. Carefully scoop out the inside and cut it into small pieces.
Chop the pepper, tomato, and onion into small pieces. Add the egg, the inside of the eggplant and mix. Line the inside of the eggplant with ham and layer the prepared stuffing.
Bake in a preheated oven at 355 °F / 180 °C for 30 minutes. Just before the end, sprinkle the top with grated parmesan and put it back in the oven. Enjoy!
