Clean the meat and cut into strips. Drizzle with oil, add spices and soy sauce and leave overnight in the fridge.
Heat the oil in a wok, add the meat and stir-fry. Add rice vinegar, sugar and salt. Stir and fry again for a while. Add carrot and leek cut into noodles, onion cut into strips, red pepper and zucchini cut into cubes. Salt to taste.
Then add the chili sauce and let it cook for about 5 minutes. The vegetables must be soft enough.
Finally, add diagonally sliced fresh green onion (the white part, keep the green part for the final decoration). Add salt if necessary. As a side dish, jasmine or basmati rice is perfect.
