As I mentioned in the previous recipe, I baked more coconut sweets during last Christmas than I planned, but my family is obsessed with coconut, they just love it. I tried to make coconut bites and I have to say that they definitely turned out well. The coconut cream is the best I've ever made. Made from milk, coconut, sugar, butter and grounded Lady fingers we get a super tasty cream, which we use to put the sweet rounds together. I dipped the top of the bites in chocolate glaze and decorated it with marzipan leaves and a red ball.

Coconut Christmas bites

Ingredients

Ingredients:

2 cups
plain flour
¾ cup
powdered sugar
5.5 oz
fat
1 pack
vanilla sugar
2 tbsp
cocoa
1 pc
egg

Cream:

⅔ cup
milk
3 oz
shredded coconut
⅔ cup
powdered sugar
3 oz
ground biscuits/Lady fingers
3.5 oz
butter
to taste
rum

Glaze:

5.5 oz
cooking chocolate
3 oz
butter
Preparation steps
Print
  1. Make a dough from all the ingredients and leave to rest until the next day.
  2. Roll out the dough, cut out rounds and place them on a baking sheet lined with baking paper and bake.
  3. Dip half of the rounds in the chocolate glaze and, before the coating dries, decorate with marzipan leaves (you can also use half a walnut, almond or white chocolate chip for decoration).
  4. After the glaze has dried, glue the rounds with coconut cream.
  5. Cream:
    Boil milk, sugar, coconut and let it cool. Then mix in the crushed Lady fingers and rum. Beat the butter and mix in the coconut mass.
