Coconut slices with yolk cream

Delicious coconut slices with yolk cream. Two sheets of cocoa dough, a coconut filling between them and a delicious yolk cream on top. Some people make these slices only with egg yolk icing (they beat the egg yolks with sugar into a foam and spread it on a hot cake and let it dry). I'm not a big friend of this yolk icing, it always breaks when I cut it, so I came up with this yolk cream, which is so delicious that it goes perfectly with the coconut filling. Definitely give it a try. You will have neat slices after cutting it.

Ingredients

Dough:

2 cups
flour
4.5 oz
butter
¾ cup
powdered sugar
2 ¾ tbsp
cocoa
2 ½ tsp
baking powder
1 pc
egg yolk
½ cup
milk

Coconut filling:

2 ¼ cups
shredded coconut
5 pcs
egg white
1 cup
powdered sugar
1 pack
vanilla sugar

Cream:

4 pcs
egg yolk
1 ¼ cups
milk
¾ cup
granulated sugar
2 packs
vanilla sugar
7 oz
butter
Preparation steps
Print
  1. Sift the flour, baking powder and cocoa into a large bowl, add the grated butter and process. Add sugar, yolk and 1/4 cup of milk. Process a smooth elastic dough (add the remaining milk as needed).
  2. Divide the processed cocoa dough in half and roll each piece into an approx. 13 x 10 in' rectangle.
  3. Transfer the dough to a higher mold, which is lined with baking paper, layer the coconut filling and place the second sheet of dough.
  4. Coconut filling:
    Beat the egg whites to a stiff foam with a pinch of salt, just before the end of the whipping, add sugar and vanilla sugar and beat to a glossy foam. Finally, mix in the coconut with a wooden spoon.
  5. Bake the cake prepared in this way in a preheated oven - bake at a temperature of 320 °F / 160 °C until golden. If air bubbles form on the surface during baking, simply pierce them with a toothpick. Leave the baked cake to cool.
  6. Whip the egg yolks with a fork with vanilla sugar and granulated sugar, add milk and cook over low heat until thickened.
  7. Beat the butter with a mixer until foamy and gradually add the cooled egg yolk pudding.
  8. Layer the cream on the cooled cake and smooth it nicely. Put it in the refrigerator to harden and before serving, decorate the top with coconut or grated chocolate.
