This cake always disappears from the baking sheet while still hot. Fragrant, richly filled, crispy on top from cinnamon sugar. And if there happens to be a piece or two left the next day, it's still tasty, not like other sourdough cakes or buns that harden.

  1. Prepare leaven from milk, a little sugar and yeast, then pour it into flour, add melted butter, the remaining sugar, a whole egg and one more yolk, a pinch of salt and knead a soft dough.
  2. Let it rise for about an hour until it doubles in volume.
  3. Then roll the dough thinly and spread it generously with jam.
  4. Then fold the dough by folding the bottom side up to about a third and then do the same with the top side, which you fold to the bottom, creating three layers.
  5. Cut into 1.5-2 in' strips, place on a greased and floured baking sheet and finally wash with melted butter and sprinkle with a mixture of 2 tablespoons of sugar and 1 tablespoon of ground cinnamon.
  6. Leave to rise for 10 minutes and bake for 15 minutes at 390 °F / 200 °C.
