Bacon jam

When you think of jam, most of us think of a fruity sweet treat. But you can also try something completely different - choose bacon instead of fruit. The preparation is simple, but it takes quite a long time. This is the only way all the excellent flavors can combine in order to create a delicious result.

Bacon jam has a wide range of uses. It is perfect for various canapes and pastries, for example in combination with cheese. In addition, however, you can also add jam to pasta or gnocchi to prepare a quick lunch or dinner. Last but not least, this bacon delicacy also goes well with burgers.

  1. Cut the bacon into thin slices. Then cut them into small cubes. Prepare a deep frying pan, let it heat up to a medium temperature and fry the bacon. Let it fry until golden.
  2. Then remove the bacon from the pan. Let the fat drip off, you will need about 3-4 tablespoons of cooked fat. Fry finely chopped onion in a frying pan until "glassy". Then add the finely chopped garlic and fry for a while.
  3. Then sprinkle with smoked paprika and add syrup and cane sugar. It is not necessary to add 4 spoons straight away, it is better to add gradually and you can sweeten it more later.
  4. Pour both vinegars into the pan, possibly also bourbon and sprigs of thyme. Return the bacon to the mixture, mix well and let it bubble for a while.
  5. Then add 3/4 cup of water, lower the temperature and let it cook for about 1.5 hours. Add more water as needed.
  6. Feel free to season at this point - if the bacon was not salty enough, add salt.
  7. During the slow reduction on the heat, the onion is lost, the sugar caramelizes, and the jam thus gets a typically sticky consistency and brown color.
