I've tried a lot of roulade recipes and the dough always broke or the top cracked when I rolled it. The roulade tasted great, but it wasn't perfect to look at. I modified the original recipe a bit and it turned out to be a recipe for a soft dough, which is a joy to roll :) I recommend trying it.

egg
⅔ cup
granulated sugar
¾ cup
flour
for filling
cream cheese
for filling
tangerines
on top
icing sugar/chocolate/marmalade

  1. Beat the egg whites with sugar until foamy, gradually add one yolk at a time and beat thoroughly after each one. Finally, just mix in the flour by hand with a whisk.
  2. Spread the dough on a baking sheet lined with baking paper and bake in a preheated oven. Bake at 355 °F / 180 °C for about 7-10 minutes.
  3. After baking, roll the dough with baking paper and let it cool. After cooling, remove the paper, fill with cream and fruit and roll up again.
  4. Sprinkle the top with icing sugar and pour the glaze zig-zag.
