A simple caramel frosting made from sugar, whipping cream and butter

A simple and quick caramel frosting, perfect for snacking or as a topping for desserts, ice cream and various treats. I usually make this frosting for cheesecakes, where lemon frosting is written in the original recipe, but we like it much more with this one.

Ingredients
10.5 oz
granulated sugar
8 oz
whipping cream
4.5 oz
butter

  1. Put the sugar in a tall pot and let it slowly caramelize, stirring occasionally (be careful not to make it too dark).
  2. Add the butter to the caramelized sugar and keep stirring over low heat until the butter melts (it takes a little patience).
  3. Pour in the whipping cream, it will start bubbling properly, watch out for burns (that's why I wrote in the introduction that you need to use a higher pot). You'll probably get lumps, but that's okay, just keep stirring patiently on very low heat until the lumps dissolve.
  4. A thin sauce will be formed, which you then pour into jam jars and leave to cool. If you still have lumps, strain the caramel while still hot through a sieve.
  5. After cooling, store in the refrigerator. The caramel hardens a bit in the fridge and is no longer so runny.
