Almond-zucchini bread

This was truly the last zucchini from my garden. This year, we had really a lot of zucchini, so every week I thought about hiding it in the main meal, in a dessert or even in bread, so that the family members wouldn't know about it, because they were even dreaming about zucchini.

almond flakes
for sprinkling

Preparation steps
  1. Wash the zucchini, dry it and grate it on a fine grater. Put in a sieve and add salt. Let it stand to drain the excess juice.
  2. Prepare a baking bread form, line it with baking paper and heat the oven to 355 °F / 180 °C.
  3. Melt the butter, let it cool. Sift the flour into a bowl, add baking powder, baking soda, ground cinnamon, ground almonds and a pinch of salt. Beat the eggs with the sugar until foamy, do it gently and only with a whisk, you don't need to use a mixer. Add melted butter, vanilla essence and mix together. Finally, add the zucchini and at the very end, add the loose mixture.
  4. Pour the dough into the form, smooth it and sprinkle with flakes. Bake for about 60-70 minutes, keep an eye on it.
  5. After baking, remove the bread and let it cool. Sprinkle the top with icing sugar and serve.
