Amazing banana monkey cake

Amazing banana cake. My husband loves banana cakes in any way and he requested it so I baked one. I tried a new recipe that I hadn't tried before and it was fantastic. The dough was delicious, the oil in the dough made it not crumble at all and held it together. I loved the cream made from mascarpone and whipping cream, aaah I'm still drooling now but the cake is long gone :)

Ingredients

Dough:

5 pcs
egg
1 ½ cups
crystal sugar
½ cup
oil
½ cup
water
3 tbsp
cocoa
1 ⅔ cups
semi-coarse flour
1 ½ tsp
baking powder

Cream:

16 oz
mascarpone
¾ cup
powdered sugar
1 pc
lemon - juice
6 sheets
gelatin
16 oz
whipping cream

Glaze:

7 oz
dark chocolate
1 tbsp
oil
5.5 oz
whipping cream

Extra ingredients:

8 pcs
banana - medium-sized
on top of bananas
lemon juice

  1. Beat the eggs and sugar with a mixer until foamy, slowly add the oil alternately with the water. Finally, just use a wooden spoon to gently stir in the mixed mixture of cocoa, flour and baking powder.
  2. Layer the prepared dough on a baking sheet that you have greased and sprinkled with flour and bake in a preheated oven at a temperature of 430 °F / 220 °C for about 10-15 minutes.
  3. Take out the baked dough and let it cool. Place the halved bananas and drip them with lemon juice to prevent them from turning brown.
  4. Soak the gelatin sheets in water and let them swell (follow the instructions on the package, each gelatin is different). In a bowl, rub the mascarpone with sugar and lemon juice. Put a little of the mascarpone mass into the gelatin, mix and put the gelatin mass into the whole mascarpone mass. In the second bowl, whip the cream until stiff and gently mix it into the mascarpone mixture with a wooden spoon.
  5. Spread the prepared cream on the bananas and smooth it well. Let it harden in the fridge.
  6. When the cream has hardened, prepare the glaze. Melt the chocolate in a water bath and add oil and cream. Combine it by mixing and pour over the cream. Smooth it well and put it in the refrigerator to harden.
