  1. Separate the egg whites and yolks. Beat the egg whites together with the sugar to a stiff, glossy foam. How do you know that you have properly whipped egg snow? Lift the whisks from the mixer out of the egg white foam and turn them upside down. The egg snow should stand nicely, it shouldn't fall down and it shouldn't separate from the whisks at all.
  2. If you have stiff, shiny egg whites foam, gradually add one yolk at a time and beat thoroughly. Then we reduce the speed of the mixer to as low as possible and add water and oil. Turn the mixer off and mix in the sifted flour and cocoa by hand with a whisk.
  3. Pour the prepared dough into the form, smooth it out nicely (line the form with a baking paper and you don't need to grease the sides with butter, oil or other fat or pour flour) and bake in a preheated oven. We heated the oven to 390 °F / 200 °C and as soon as we put in the dough, we reduce the temperature to 355 °F / 180 °C and bake for 25-30 minutes. Stick test - if nothing stays on the stick, the cake base is ready.
  4. Carefully peel off the edges with a knife, remove the frame of the form, turn the dough upside down so that the surface is flat and let it cool on a cutting board.
