Carrot cake with homemade marzipan

Excellent and looks good, too. I shaped the carrots from homemade marzipan and colored them with gel food colorings. You can't even feel the carrot taste in the cake.

Ingredients

Dough:

4 pcs
egg
1 ¼ cup
oil (olive oil is fine)
2 cups
brown sugar
2 tsp
vanilla extract (or maple syrup)
2 cups
flour
2 tsp
baking soda
2 tsp
baking powder
½ tsp
salt
2 tsp
cinnamon
3 cups
coarsely grated carrots
1 cup
walnut

Filling:

16 oz
Philadelphia cream cheese
2 cups
powdered sugar
1 tsp
vanilla extract (maple syrup)
1 pc
lemon - juice
2 tbsp
butter (to prevent the frosting from cracking)

Marzipan:

3.5 oz
instant dry milk
¾ cup
powdered sugar
1 tsp
honey
a little
water
1 pc
egg white
Preparation steps
Print
  1. Beat eggs, sugar and vanilla extract. Add dry ingredients, oil. Finally, carrots and nuts.
  2. Pour into a cake form (I don't bake it on a baking sheet, but it's probably possible). Bake for about 1 hour at 350 °F / 175 °C.
  3. Leave the cake to cool, cut it in half lengthwise, spread 1/3 of the filling, fold it over and cover the entire cake with the remaining filling. It is the best the following day.
  4. Glaze:
    16 oz Philadelphia cream cheese, 2 cups of powdered sugar, 1 teaspoon of vanilla extract (maple syrup), juice from 1 lemon, 2 tablespoons of butter (so that the glaze does not crack).
  5. Marzipan:
    It's the best to create it with your hands, so the dough is nice and smooth. Colored with Wilton icing colors.
