This morning wouldn't have been possible without Christmas Finnish pulla... This year I tried another recipe and this one is not as fluffy as a feather, but it is soft and smells nice, just like from my mother.

crystal sugar

salt

mace flower

lemon - zest

lukewarm milk

yeast

  1. Dough made and leavened in the home bakery (appliance). I let the whole cycle run (90 minutes) and then the dough, closed in the bakery, rose for another hour and a half.
  2. Then I divided it into 9 parts, rolled out the "snakes" and braided the Christmas Finnish pulla in the classic way from four, three and two strands.
  3. I let it rise for another hour and a half in plastic bag.
  4. Then I washed the whole Christmas Finnish pulla with beaten egg, sprinkled with chopped almonds and baked for 1 hour at 320 °F / 160 °C.
