Delicious vanilla Christmas cookies that look brilliant on the table. They are small penny shaped cookies that you have ready in a few minutes. The dough is great to work with, it doesn't fall apart or crumble at all, and it even makes nice looking balls that will smell good in the whole apartment after baking.

  1. Beat butter at room temperature with sugar and vanilla sugar until foamy, add one egg at a time and mix thoroughly after each one.
  2. Then add flour mixed with baking powder, starch and a pinch of salt.
  3. Take smaller pieces from the dough, which you shape into a ball. Using your fingers, gently form the ball into a "penny" and place on a paper-lined baking sheet.
  4. Bake in a preheated oven at 355 °F / 180 °C for 15 minutes.
  5. After baking, leave to cool on, dip the top in chocolate and then immediately coat in shredded coconut.
