Crunchy walnut cookies filled with chocolate cream

This recipe is from 1973 if not earlier. Even then, they knew that simple and tasty baking was the real deal.

Ingredients

Dough:

3 cups
plain flour
7 oz
margarine or butter
¾ cup
crystal sugar
1 pc
egg
2 pcs
egg yolk
a pinch
salt
2 packs
vanilla sugar
2 tbsp
rum
5.5 oz
ground walnuts
2 pcs
egg white
to taste
lemon zest

Glaze:

3.5 oz
dark chocolate
1.5 oz
butter

  1. Cut the butter or margarine into cubes and place in a bowl. Add vanilla sugar, crystal sugar, salt, lemon zest, 2 egg yolks, 1 egg, flour, rum. Process a smooth dough and put in the refrigerator for one hour.
  2. Shape the dough into smaller balls (the size of a cherry), dip them in the egg white and coat them in ground walnuts.
  3. Place them on a baking sheet lined with paper and bake in a preheated oven at 355 °F / 180 °C for about 20 minutes.
  4. Beat the butter into a foam and gradually, in a thin stream, pour in the slightly warm, melted chocolate. Stick the balls with the cream and you can serve.
