Fruit cake with mascarpone cream and fruit gelatin

An excellent refreshing dessert for these very hot days. As today is the first day of summer, I allowed myself to bake this delicacy yesterday with a big amount of fruit in gelatin. I enjoy making this cake and of course eating it too, it's very easy to make and the best thing is that it's not too sweet at all and there's no buttercream either, which is not at all suitable for these days.



3 pcs
egg yolk
¾ cup
powdered sugar
3 ½ tbsp
3 ½ tbsp
1 cup
semi-coarse flour
3 pcs
egg white


8 oz
8 oz
whipping cream
for taste
10 sheets
gelatin (cook as per instructions)
Preparation steps
  1. Beat 3 egg yolks with 3/4 cup of powdered sugar to a white foam, add 3 and 1/2 tablespoons of oil while still whisking...then 3 and 1/2 tablespoons of water and still whisk thoroughly. Then, with a wooden spoon, carefully mix in 1 cup of semi-coarse flour, finally the mixture from 3 beaten egg whites.
  2. I baked at 350 °F / 175 °C, I don't know the length, I watch the color and firmness. Also, prevent the dough from sticking to the stick. Form has 10 inches in diameter.
  3. Cream: I whipped together 8 oz of mascarpone, 8 oz of whipping cream, sugar based on taste and when it was a little firm, I added a little bit of strawberries and whipped until stiff.
  4. I spread it on the cake and after the cream had set in the fridge, I added the strawberries and covered them with gelatin, following the instructions on its label.
