Recipe Heaven in the mouth - soft nutty half moons

A simple treat with a rich nutty crumb. Soft as a cobweb and incredibly tasty. Totally perfect for me. I don't like very sweet desserts that have heavy butter creams, so I highly recommend these with a cup of coffee or tea. There are crunchy nuts on top, so it will give your half moons a perfect taste. Try it, you will be pleasantly surprised by the result.

  1. Prepare a baking sheet, line the bottom with baking paper and preheat the oven to 355 °F / 180 °C.
  2. Melt the butter over low heat and let it cool slightly. Then beat it together with powdered sugar (1 & 1/4 cups) and vanilla sugar, add lemon zest, salt and rum and finally mix in the egg yolks.
  3. Beat the egg whites to stiff foam, beat the remaining 1/3 cup of powdered sugar into the foam and beat until the foam is shiny. Lightly mix the egg white foam into the yolk mass, add flour and baking powder.
  4. Pour the dough onto the baking sheet, smooth it out nicely and sprinkle with ground nuts. Bake for 20-25 minutes and let the baked cake cool.
  5. Cut out half moons from the dough with a round mold or any other shape, depending on which mold you have available. Before serving, sprinkle with powdered sugar.
