Classic homemade mayonnaise will strain your mixing endurance. The longer you mix, the fluffier and tastier the mayonnaise turns out. Prepare classic mayonnaise as follows:
Blend the mustard seeds completely into a powder (you can as well buy the powder in the store), add salt, lemon juice and egg yolk.
Mix with a whisk until smooth and gradually pour in the vegetable oil in a thin stream. You can add any ingredients to the thoroughly mixed mass and flavor it to your liking.
You can find some tips for flavored mayonnaise here:
Garlic mayonnaise with basil
Add a handful of basil leaves and two cloves of garlic to the mayonnaise and blend in a blender.
Mayonnaise with curry spices
Add a teaspoon of curry spice and a teaspoon of chili sauce to the mayonnaise. You can add ground black pepper.
Lemon mayonnaise with capers
Add the zest and juice from one lemon and 2 tablespoons of capers to the mayonnaise. Blend in a blender.
