sour cream

lotus spread

Preparation steps

  1. Mix the cookies in a blender. Add butter (room temperature) and mix again. Put the mixture onto the bottom of a round baking mold (diameter 10 in) lined with baking paper (only the bottom of the baking mold). Press the mixture evenly on the bottom of the baking mold and pre-bake in an oven heated to 355 °F / 180 °C for 5 minutes.
  2. Beat the mascarpone and sour cream a little with a hand mixer. Add eggs and cream cheese and beat again. Finally, add the flour and sugar and beat again, or mix, to combine all the ingredients.
  3. Pour the cream onto the pre-baked cake base and bake at a temperature of 310 °F / 155 °C for about 50 minutes. During baking, put a baking sheet with water on the bottom of the oven.
  4. After baking, let the cheesecake cool in the slightly open oven for at least half an hour before removing it.
  5. Prepare the glaze by melting the lotus spread in a saucepan on a low heat. Pour it over the cooled cheesecake.
  6. Put the cake prepared in this way in the refrigerator, ideally for the night.
