No-bake fresh coconut & peanut cake without sugar, flour and eggs

No flour, no sugar, no eggs and no baking. If you doubted that you could make a great cake without these things, you were wrong.

Ingredients
4.5 oz
ground walnuts
4.5 oz
dates (no pits and pre-soaked in water for 20 minutes)
7 oz (14 tbsp)
peanut butter (no sugar added)
5 tbsp
coconut oil
1 can/13.5 oz
thick coconut milk
8 oz
frozen berries mix
3 tbsp
chia seeds
2 tbsp
honey
a pinch
cinnamon
a pinch
sea salt
Preparation steps

  1. Prepare a cake form with a diameter of approx. 9 in (if you want a taller cake, use a form with a diameter of 8 in).
  2. Dry the soaked dates and blend them into a mash. Add nuts, cinnamon, salt and 2 tablespoons of coconut oil. You will make a moldable dough - use it to line a cake form greased with a little coconut oil (it is not calculated in the ingredients). Put in the freezer for 10 minutes.
  3. Meanwhile, combine the peanut butter and 12 tablespoons of coconut oil in a blender. Pour it over the dough and put it back in the freezer for 15-20 minutes.
  4. When it is cooled and solidified, layer coconut milk mixed with 1 tablespoon of honey and put it in the freezer for about 15 minutes.
  5. Boil the frozen berries with 1 tablespoon of honey in a pot for 2-3 minutes, set aside, add chia seeds while still warm and let it stand for a while.
  6. Pour the lukewarm fruit onto the coconut layer and the cake is ready. All that's left to do is to let it cool down (5-6 hours) and then you can "get busy with it".
