So this is the food of my childhood. I don't even remember when I made this recipe at home. I remember it from the school canteen. We always got a cup of milk and yogurt to go with it. If I have evoked memories in you, then rush to the kitchen and cook this perfect mean, to which you can add various fruits. I like apricots best, but in the school canteen they used to make it with cherries.

Rice pudding with apricots and cottage cheese

I like apricots best, but in the school canteen they used to make it with cherries.

Ingredients
2 ¾ cups
rice
3 ⅓ cups
milk
3 tbsp
butter
a pinch
salt
1 cup
crystal sugar
1 pack
vanilla sugar
6 pcs
egg
8 oz
cottage cheese
based on your taste
sugar
1 pc
lemon zest
apricot compote
on top
cinnamon sugar
Preparation steps
Print
  1. Pour milk over the washed rice, add butter, salt and, while stirring constantly (without stirring, the milk will burn), cook the rice until soft.
  2. Separate the eggs. Beat the egg whites with sugar and mix the egg yolks into the beaten egg white mixture, add the warm cooked rice, mix well.
  3. Put half of the mass into a smaller, deep baking sheet greased with butter and sprinkled with breadcrumbs.
  4. Layer the cottage cheese seasoned with sugar based on your taste, lay the drained compote fruit and cover with the remaining rice-egg mass.
  5. Sprinkle the top with cinnamon sugar.
  6. Bake at 355 °F /180 °C for approx. 30 min.
  7. Serve with poured compote juice, possibly syrup or decorated with extra fruit.
