Ingredients

Dough:

4 ¼ cups
whole grain spelt flour
1 cup
milk
½ cup
olive oil
1 tbsp
sugar
1 ½ tsp
salt
¾ tsp
instant dry yeast

Filling:

12 oz
ham
8 oz
cheese (gouda/mozzarella)
½ can (7oz)
sweet corn
8 oz
olives
to taste
ketchup
to taste
dried oregano
for wash
eggs
for sprinkling
sesame

  1. Make leaven from milk, a little sugar and instant dry yeast.
  2. Then mix it with flour, salt, sugar and olive oil and make a soft, non-sticky dough. Let it rise for about an hour.
  3. After it has risen, roll it out thinly. It must be thin, otherwise the snails will be not be filled enough and after baking you will just have dry dough.
  4. Spread it with ketchup, sprinkle with oregano, place ham, corn, chopped olives and sprinkle with cheese.
  5. Roll up the filled dough, cut it into approx. 1 in' strips and place it on a greased and floured baking sheet.
  6. Wash each snail with an egg and sprinkle with sesame seeds.
  7. Leave to rise for 15 minutes and bake for 20 minutes at 390 °F / 200 °C.
