Do you still have zucchini in the fridge? Try to prepare fantastic gnocchi either for a soup or as a main meal with bacon and fried onions or as a side dish with sauce.

Ingredients

Ingredients:

1 small pack
instant mashed potatoes (semi-finished powdered product)
approx. 14 oz
baby zucchini
2 pcs
egg
1 ½ tsp
baking powder
salt
as needed
coarse flour
Preparation steps
Print
  1. Grate the zucchini together with the skin (if the zucchini is a baby type) on a grater, add eggs, baking powder, salt and mix it.
  2. Add the instant mashed potatoes powder from the bag, mix again and add flour as needed. The dough must not be too thin. The consistency must be such that you can cut out the gnocchi with a spoon.
  3. Throw gnocchi into the boiling, salted water in the size of...well, something between a ping pong ball and a golf ball...or whatever you prefer.
  4. When they float to the surface, cook for another 7 minutes.
    Remove with a slotted spoon and a little bit of oil or any type of fat.
  5. Serve it as a side dish with sauce, cabbage, or on its own with fried bacon and fried onions and maybe a vegetable salad.
