If you have a lot of zucchini, stock up on a tasty spread for the winter. You can use this zucchini mixture on toast, as a sauce for meat or even as a dip for chips.

  1. Wash and dry the zucchini. Use young zucchini that do not have large seeds inside, but if you have older ones and find large seeds inside, scoop them out with a spoon.
  2. Cut the zucchini into small cubes, put them in a pot and cook until the zucchini is cooked well. If you don't have much time, you can grind the zucchini in a meat grinder.
  3. Peel and finely chop the onion and garlic. Add to the boiled zucchini, salt it, add sugar and pepper to taste.
  4. Add oil, ketchup and simmer over low heat for approx. 2-3 hours. Stir occasionally to prevent the zucchini from burning. The stewing time depends on the zucchini - it depends on how much water it releases, so cook the zucchini to the desired thickness of the spread.
  5. Add vinegar and simmer for another 10 minutes. Then set the spread aside, fill it into glasses and seal it tightly.
  6. Turn upside down, cover with a blanket and let cool. Store it in a dark, cool place. Enjoy!
