A mascarpone-lemon pound cake that is a real summer hit. It combines the freshness of lemon and the softness of mascarpone.

There is not a single family that doesn't bake pound cakes. If you've had enough of the classics, try this lemon mascarpone one. An excellent change that goes well with an afternoon Sunday coffee.

1 cup
granulated sugar
1 cup
whole grain flour
1 cup
plain flour
8oz
mascarpone
1 pc
lemon
½ cup
oil
2 ½ tsp
baking powder
1 pack
vanilla sugar
1 tbsp
cocoa
Preparation steps

  1. Beat the egg yolks with granulated sugar and vanilla sugar until foamy.
  2. Gradually add oil, flour, baking powder, lemon zest, mascarpone and lemon juice.
  3. Beat the egg whites and gently add to the dough. If you want a two-colored pound cake, mix a spoonful of cocoa into the half of the dough.
  4. Bake at 320 °F / 160 °C for about 60 minutes.
