We haven't eaten better cake at home. The dough was amazing and absolutely pliable and fluffy. Everyone liked it and it all disappeared from the tray in a few minutes. This Raffaello cake is a real paradise for everyone with a sweet tooth. This cake combines the delicacy of coconut, which mixes perfectly with various types of fresh fruit, creating a harmonious and slightly exotic symphony of flavors. The velvety texture of the cake is then supplemented by the delicate sweetness typical of Raffaello, which enhances the overall experience even more.

  1. Beat the eggs with sugar until stiff, gradually add milk, oil, flour with baking powder.
  2. Pour the prepared dough onto a baking sheet that you have greased with butter and sprinkled with flour.
  3. Sprinkle the still raw dough with shredded coconut mixed with powdered sugar.
  4. Place fruit on the dough sprinkled with shredded coconut according to your taste. I added raspberries, blueberries and currants.
  5. Put in a preheated oven at 355 °F / 180 °C for about 25 minutes. Test with a skewer to see if it's baked. If it's dry, it's done.
  6. Pour whipping cream over the cake immediately after removing it from the oven. Let it cool.
