Wash, peel and cut the potatoes into fries. Beat the egg whites with a pinch of salt until stiff.
Add the whipped egg whites to the fries and mix thoroughly.
Prepare a baking sheet and line it with baking paper.
Place the fries in such a way that they do not touch each other, sprinkle them with ground red pepper (optional) and bake in a preheated oven at a temperature of 355 °F / 180 °C until golden.
