Ingredients

Coconut dough:

5 pcs
egg whites
10 tbsp
shredded coconut
¾ cup
crystal sugar
2 tbsp
semi-coarse flour
0.5 oz
baking powder

Walnut dough:

7 tbsp
ground walnuts
0.5 oz
baking powder
2 tbsp
semi-coarse flour
3 tbsp
cocoa
5 pcs
egg whites
¾ cup
crystal sugar

Cream frosting:

1 ¾ cup
milk
1 pack
vanilla sugar
1 cup
crystal sugar
2 packs
vanilla pudding
10 pcs
egg yolk
8 oz
butter
5.3 oz
mascarpone
for decoration
chocolate
Preparation steps

  1. Prepare a baking tray of 12.5 x 9 in. Preheat the oven to 350 °F/ 175 °C.
  2. Whisk the egg whites with sugar until you get a thick foam and gradually add coconut alternately with flour, mixed in advance with the baking powder. Layer on a baking tray lined with baking paper and bake at 350 °F/ 175 °C for about 15 minutes.
  3. Prepare a brown layer while the coconut one is being baked. Mix the nuts with flour, baking powder and cocoa. Whisk the egg whites together with sugar into a thick foam and gradually add the dry mixture. Bake just like a coconut layer.
  4. Prepare the cream. Put the milk on the stove, add vanilla sugar (or add a vanilla pod, which needs to be dipped in the milk for one hour) and crystal sugar, then add puddings. Gradually heat and add the egg yolks while stirring. When the mass thickens, remove from heat and let it cool.
  5. Beat the butter into the foam and add mascarpone and cold yolk. Mix until smooth and layer it on the coconut crust. Cover with the brown walnut layer and put a little bit of frosting on top as well.
  6. Sprinkle the top of the cake with chocolate shavings and cool in the fridge. Cut into slices and serve. Enjoy the cake!
