Mexican style chicken saute with grilled carrots

A healthier option for a tasty lunch. Try the carrot fries, they are delicious.

Ingredients
16 oz
chicken breast
1 pc
onion
1 cup
red beans
1 cup
frozen corn
1 pc
chili pepper (jalapenos)
1 tsp
oregano
2 pcs
carrot
coconut oil
Provencal/grilling spices
tomato puree
salt
pepper
Preparation steps

  1. Cut the chicken breast into pieces, fry the finely chopped onion in oil. Then add the meat and fry it until white, add the beans (pre-soak red beans and boil them until soft or use canned beans), corn, season with salt, ground pepper, chili pepper (I used jalapenos, finely chopped), tomato puree (the smallest can or homemade), 1 tsp oregano and simmer everything until soft.
  2. Carrots: cut the washed carrots into the shape of fries, "pre-steam" them in a steamer so that they are soft (approx. 15 min.). Then put some coconut oil on the pan and grill them.
  3. Just before the end, sprinkle with Provencal or barbecue seasoning.
